I agree ammonia is proportional to feeding. The issue with shark tanks being overwhelmed might be due to the instantaneous shock of ammonia when a shark decides it's time to let it go. Much more volume at one time than it would be with 40 fish and a proportional feeding / urea production model I would think. This would mean short-term high spikes of ammonia with sharks (just guessing here but it makes sense)
Also the ammonia problem might be related to the fact that there really is no other filtration system that takes care of ammonia naturally, maybe bio-balls but those have their drawbacks too. And it would have to be a lot of them, like in an ammonia tower.
