The Darice #7 plastic canvas is not rigid. It is highly flexible, but it is not like cloth. So you can roll it, but then it would spring back if you let it go.

It is also known as cross-stitch canvas. It is almost always in the same section as the yarn for knitting.

You want the stuff that has 7 holes per inch, or 7 holes per 25mm. Usually you can find it in #5 (5 holes/in, larger holes) and #10 (10 holes/in, very small holes). 7 holes/in is about 3.5mm between hole centers, and the holes will be about 2mm square (I think).

Find some good pictures on that link I sent you, print them out, and bring them to the store. That might help.
